Today I’m sharing a delicious and hearty breakfast muffin that is packed with nutrients and perfect for snacking.
These breakfast muffins are sweetened with honey and dates and include oat bran for a more filling snack.

Super Seed Breakfast Bran Muffins
Yeild: 15 muffins
Prep time: 10 minutes
Bake time: 18-20 minutes
Ingredients
1 C flour
1/2 C oat bran
1/4 C ground flaxseed
1/2 C shredded coconut
1/2 C pepitas, roughly chopped
2 tsp baking soda
1 tsp salt
2 tsp cinnamon
1/4 tsp nutmeg
2 eggs
3/4 C milk
1/4 C butter, unsalted
1/2 C honey
1 tsp vanilla extract
1/2 C dates, chopped
Directions
1. Preheat oven to 350 F and line a muffin tin with parchment muffin cups.
2. Combine all dry ingredients and seeds into one bowl (withholding dates). Whisk until blended together.
3. In a separate, larger bowl whisk together wet ingredients.
4. Add dry ingredients into wet ingredients and stir until no dry flour remains. Then fold in chopped dates.
5. Using 1/4 C measure, portion out muffin mix and bake at 350 F for 18-20 minutes. When baking the final three muffins, fill each empty muffin space with about 1/2 inch of water.
