Today I’m sharing a deliciously nutritious granola bar that is packed full of healthy seeds.
These granola bars are packed with beneficial ingredients, sweetened with dates, and topped with a rich dark chocolate. What more can you ask for?
Oh, and they’re a hit with the kids! Now you really can’t ask for anything more.

I’m not a health expert or dietitian; however, personal research has led me to include more seeds in my diet. Listed below is a simple break down of a few health benefits of many of the ingredients used in these no bake super seed granola bars.

Pecans: protein, healthy fats, and many vitamins including vitamins A, E, and zinc
Pepitas: antioxidants and magnesium
Oats: soluble fiber and a multitude of minerals including phosphorus, thiamine, and manganese
Hemp seeds: omega-3 to omega-6 fatty acids and essential amino acids
Chia seeds: fiber and antioxidants
Ground flax seed: omega-3 fatty acid, fiber, and lignans

No Bake Super Seed Granola Bars
Yield: 8
Prep time: 15 minutes
Chill time: 40 minutes, divided (optional)
Measurements
1 package of un-pitted dates (mine came with 12 individual dates)
1/4 C chopped pecans
1/4 C chopped pepitas
1/4 C oats
1/4 C shredded coconut
2 TBSP hemp hearts
2 TBSP chia seeds
2 TBSP ground flax seed
1/4 C dark chocolate (optional)
Directions
1. Pit your dates and allow them to soak in water for 5 minutes. This soaking step will ensure you achieve a very moist granola bar as opposed to a dry one. While the date soak, prepare your 8×8 baking dish by lining it with parchment paper. If you don’t have an 8×8 baking dish, you could definitely free hand the shape of your granola bars on your parchment paper. You could also look through your food storage containers and see if you have any that could be used to mold your granola bars.
2. Add softened dates to your food processor or high speed blender and puree until a thick paste forms. You may need to continually scrape down the sides of the food processor.
3. Transfer date paste into your mixing bowl and add all dry ingredients except ground flax seed and dark chocolate.
4. Mix ingredients until fully incorporated. Add your ground flax seed and continue to mix until evenly distributed. I found that adding the ground flax last helped fight having a very sticky granola bar – similar to flouring a surface so that dough doesn’t stick to it.
5. Let granola bars harden in the refrigerator for 20 minutes. This chill time is optional depending on the solidity of your granola bar slab. This chill time also assists in a quicker hardening of the chocolate after spreading in the next step.
6. If you’re including chocolate in your granola bars, melt it until you can easily spread it across the top of your granola bar slab.
7. Let the granola bars chill in the refrigerator for another 20 minutes until the chocolate fully hardens.
8. Once the chocolate has hardened, cut your granola bars to your preferred size and store in an airtight container with parchment paper between layers. Just reuse the parchment paper previously used.
Plan of Action
I typically make these no bake super seed granola bars at the beginning of the week for my family to enjoy. These are also great traveling snacks for my children.
