Sourdough Discard Granola Recipe

Today I’m sharing an easy, deliciously crunchy granola recipe that uses up some of your sourdough discard.

If you’re looking for a clustery granola, then you’re reading the right post! This granola recipe incorporates a smidgen of your sourdough discard to create a delightfully chunky, yet light, granola.

This granola still maintains its airy crispiness – even with the added sourdough discard – so you won’t unintentionally make granola bars instead of a chunky, clustery granola.

We enjoy this granola mixed in yogurt or as a cereal under milk kefir. My daughter also loves to munch on it plain. I can’t even wait for it to cool before munching on it myself!

Tools you may need

Mixing bowl

Measuring cups and spoons

Baking sheet or casserole dish

Parchment paper or a silicone baking mat

Sourdough Discard Granola Recipe

Measurements

2 C oats or flakes (or a combination of both)

1/2 C shredded coconut

1/2 C slivered almonds

2 TBSP ground flax seed

1/2 tsp cinnamon

2 TBSP sourdough discard

2 TBSP avocado oil

4 TBSP honey*

*We enjoy a sweeter granola, but feel free to adjust to your family’s preference. Maple syrup may also be substituted for honey.

Directions

1. Preheat oven to 350 F and prepare a baking sheet with parchment paper.

2. Whisk together wet ingredients.

3. In a separate bowl combine dry ingredients and seasonings.

4. Add wet ingredients into the dry ingredients and mix until fully incorporated.

5. Gently pack mixture onto baking sheet or casserole dish in an even layer.

6. Bake for 13-17 minutes, or until golden. Do not stir midway. We want our granola to form clusters, mixing it halfway baking would defeat that purpose.

7. Let the granola cool completely before breaking it into pieces. Again, by letting the granola cool, it will form those delicious clusters.

8. Stir in other extras that do not do well in the oven (dried fruits, chocolate, or other nuts and seeds).
