Italian Sausage Soup with Basil

Today I’m sharing a simple, flavorful and heartwarming Italian sausage soup with basil that will fortify you and your family during this winter season.

Soups are an easy, delicious one-pot way to get nutritional foods into your family. I love it when healthy foods meet great flavor, and this recipe does exactly that.

Tools you may need

5 quart stock pot

Measuring spoons and cups

Chef’s knife

Cutting board

Ingredients list

Sage sausage*

Garlic

Onion

Carrot

Celery

Italian seasoning

Tomato paste

Chicken or beef bone broth

Fresh basil

Spinach

Rotini pasta**

Parmesan cheese

*If you don’t have sage sausage, you can sprinkle 1 TBSP of ground sage as you brown your plain sausage.

**I enjoy serving this soup over pasta or gnocchi. You could even try serving alongside a grain blend. I’ve always wanted to try it over zucchini noodles too!

Italian Sausage Soup with Basil

Prep time: 10 minutes

Cook time: 20 minutes

Servings: 6-8 people

Measurements

1 package sage sausage

4 cloves of garlic, minced

1 onion, diced

2 carrots, sliced

2 celery stalks, sliced

2 tsp Italian seasoning

Red pepper flakes, pinch

3 TBSP tomato paste

4 C chicken or beef bone broth

¼ C fresh basil, chopped

2 handfuls of spinach (optional)

16 oz rotini pasta or gnocchi (cooked separately)

Parmesan cheese, grated (optional)

Directions

1. Sauté onion, carrots, and celery in bottom of pot until softened. Add minced garlic.

2. Add sausage and brown, breaking apart into small chunks.

3. Sprinkle in Italian seasoning and red pepper flakes.

4. Stir in tomato paste and cook for 3 minutes, stirring constantly.

5. Add broth, cover with lid, and simmer for 10 minutes.

6. Remove soup from heat and add spinach, allowing it to wilt.

7. Finally stir in fresh basil.

8. Serve with noodles or gnocchi and top with freshly grated parmesan cheese.

Plan of Action

If you’re planning to serve dinner at 5:00 PM, start prepping your vegetables at 4:20 PM. If you’re considering serving this soup over dumplings or pasta, make sure to take into account the time the packaging states it will take to cook those ingredients. Cook them in a separate pot.
