Chocolate Coconut Pecan Cups

Today I’m sharing the perfect sweet snack that you won’t feel guilty about giving your kiddos or indulging in yourself!

These chocolate coconut pecan cups have a great texture paired with the perfect amount of sweetness that won’t melt your teeth off.

Tools you may need

Blender or food processor

Mixing bowl

Small pot

Kitchen scale

Muffin tin

Muffin tin liners

Ingredients list

Dates, pitted

Pecans

Cocoa powder

Coconut, shredded

Coconut butter

Maple syrup

Chocolate Coconut Pecan Cups

Yield: 12 muffin tin cups

Prep time: 15 minutes

Chill time: 15 minutes

Measurements

100 g dates, pitted

30 g pecans

25 g cocoa powder

90 g coconut, shredded

160 g coconut butter

60 g maple syrup

Directions

1. To a blender add dates, pecans, and cocoa powder. Pulse until crumbly and will stick together when packed.

2. To your small pot on the stove add coconut, coconut butter, and maple syrup. The longer you leave this mixture on heat, the more toasted flavor you’ll bring to the coconut.

3. Starting with a tablespoon, scoop an even amount of the chocolatey blended mixture into each lined muffin cup. Press date mixture with the back of your spoon to level the layer and get it to stick together.

4. Scoop two tablespoons of the coconut mixture into the muffin tins on top of the chocolate layer. Press down with the flat of your spoon to compress the mixture and get everything to stick together.

5. Chill muffin tin in the refrigerator for 15 minutes.

6. Remove liners from your chocolate coconut pecan cups and store in an airtight container in the refrigerator.
