This impeccable shrimp pasta is tossed in a light and flavorful tomato sauce and nearly reaches perfection when topped liberally with freshly grated parmesan.
Tools you may need
One large pot
One sauce pan
Measuring cups and spoons
Ingredients
Butter and olive oil
Dried pasta
Raw shrimp
Salt
Paprika
Italian seasoning*
Fresh garlic
Tomato paste
Red wine (or broth)
*If Italian seasoning is not an option for you, dried oregano works well here too.
Shrimp Pasta in Light Tomato Sauce
Servings: 4
Cook time: 20 minutes
Measurements
1 TBSP each of butter and olive oil
8 oz pasta
1 lb raw shrimp
1/2 tsp salt
1/2 tsp paprika
1 tsp Italian seasoning
3 garlic cloves, crushed
1/4 C tomato paste
1/4 C red wine
Directions
- Start the water to cook your pasta, adding a heaping pinch of salt, and season the raw shrimp with the salt, paprika, and Italian seasoning.
- Warm butter and oil together in a sauce pan on medium heat as noodles boil in a separate pot.
- Add crushed garlic and seasoned shrimp in one layer on bottom of the pan. Cook shrimp for 3-5 minutes on each side, or until shrimp are light orange in color. (At this time you could add a veggie to cook along side the shrimp like green beans, asparagus, or spinach. But this pasta tastes just as delicious without a veggie.)
- Stir in tomato paste until it starts to stick to the bottom of the pan, then add the wine and cook together for another 3 minutes. (Feel free to add 1/4-1/2 C of reserved pasta water if you need to add a bit more liquid to your sauce.)
- Add drained pasta to the sauce pan with shrimp and toss together until everything is lightly coated in the tomato sauce.
- Serve topped with fresh parmesan.
Plan of Action
If dinner is served at 5 PM, start boiling the water for your noodles at 4:30 PM and follow the subsequent steps. If I don’t include a vegetable in the pasta – as described in Step 3 – then I like to serve this meal with a simple side salad.
