Deluxe Overnight Oats

Today I’m sharing a rich, decadent recipe for overnight oats that will satisfy your sweetest craving while providing a protein punch with whole grains and seeds.

I love adding seeds to my overnight oats recipes so that the end product isn’t just a jar of mush when you dig into it.

Tools you may need

Blender or food processor

Mixing bowl

Measuring cups and spoons

Kitchen scale

Ingredients list

Dates, pitted

Pecans

Pepitas

Flaxseed, ground

Coconut, shredded

Cocoa powder

Oats

Milk

Yogurt*

Honey

*Use your favorite yogurt here! I used Greek yogurt, which left me with a thick, rich end product.

Deluxe Overnight Oats

Yield: 8 half-pint jars

Prep time: 10 minutes

Measurements

25-30 dates, pitted

1 C pecans

1 C pepitas

1/2 C coconut, shredded

1/2 C flaxseed, ground

50 g cocoa powder

2 C oats

2 C milk

2 C yogurt

5 TBSP honey

Directions

1. Pour dates, pecans, pepitas, coconut and cocoa powder into your blender and pulse until it resembles a roughly chopped, crumbly texture.

2. Add flaxseed, oats, milk, yogurt and honey into a bowl. Pour in date and nut mixture and stir until well combined.

3. Store mixture in half-pint jars and allow to soak in the refrigerator over night.

4. Enjoy for breakfast, as a snack, or a dessert.

Plan of Action

Before heading to bed, blend and mix ingredients. Store mixture in jars and place in the refrigerator overnight. Eat up in the mornings throughout your week!
