Simple Veggie Frittata Recipe

The veggie frittata recipe I’m sharing today is flavor-pack and perfect for larger families. Similarly, it’s great to make at the beginning of the week to reheat for future breakfasts.

If you have any company over, this is a great breakfast option that is simple, but sure to impress.

Tools you may need

12 inch, stove top and oven safe pan

Simple Veggie Frittata Recipe

Servings: 8

Prep time: 10 minutes

Cook time: 25 minutes

Measurements

1 onion

1 red bell pepper

1 green bell pepper

8 oz mushrooms

4 garlic cloves

12 eggs

1/2 C preferred milk (can be dairy free)

Parsley

Bacon, crumbled

Cheddar cheese, shredded

The last three ingredients are optional, but recommended for the best flavor. There are no measurements for them. Just use enough of each to cover the top of the veggie frittata.

Directions

1. Soften diced peppers and onion in a generous amount of ghee or oil (around 5 minutes).

2. Add mushrooms and garlic and cook for 5 more minutes, or until mushrooms reduce in size. Salt and pepper to taste.

3. In a separate bowl whisk together eggs and milk until slightly frothy.

4. Preheat the oven to broil at 450 F. Before adding the egg mixture to your pan, make sure there is a noticeable amount of ghee still amid the veggies – add some if there is not enough. This prevents the frittata from sticking to the bottom of the pan.

5. Add egg mixture to the pan and let cook on your stovetop to develop a slight crust. After 5 minutes, place a lid on your pan and let it cook until edges have solidified, but the mixture is quite jiggly (around 5 minutes).

6. Top gelatinous mixture with parsley, cheese, and bacon crumbles.

7. Bake in the oven, without lid, for 8-10 minutes, or until the frittata begins to brown.

8. Remove frittata from the oven and serve warm. If you’re struggling with the frittata sticking to your pan, let it sit in the pan with the lid on for 5-10 minutes to loosen those stubborn pieces.
